They might be calling them big sister because these are the all-growd-up versions of the liberated little sisters.
I always felt it was an oversight that they failed to name the juggernaughts of Bioshock Big Brothers.... but eh.

There was no mention about those in the first bioshock, so the only way I see them become part of the story is to put these Big Sisters after the original Rapture's fall - which is sort of confirmed - The riot came in 1958/1959, and the reports about Big Sisters circle around the year 1967.

The visual design and the feeling it imprints on you - the Big Daddy was this lumbering juggernaut, menacing enough through mere proximity, to the point that the fact of it tolerating your presence (around himself, not the Little Sister) made sense. You were insignificant, something that wouldn't register as a threat, and the bulk of the Big Daddy was conducive to that feeling. The diver getup worked pretty well in context, looking like something believable in the setting (pretty lights out the portholes notwithstanding), and supportive of the "threatening tank" look. Or at least that's what I got out of their aspect.
Now look at this one - it looks like steampunk for steampunk's sake. And the giant head thing? It's there only to make the connection between this new baddie and the original's trademark foe.
Instead of being a big lumbering badass in a diving suit it's a sleek, agile chick in a diving suit. I dunno what's wrong with them wanting to introduce a new character with a different concept.
Considering that the spider splicers were the only ones that were fun to fight in the original game, I'm looking forward to fighting these sexy beasts.
Nothing at all. It's called "original content" and it's a good thing. The problem pops up when you attempt to shoehorn said new concepts as a logical continuation of a completely different old concept.

Okay, I see your point. I always felt like the "Big Daddies" were a Big Joke anyway, never actually finding them threatening. (That could have been a lack of immersion issue, too.) The Big Sisters make sense if it's the matured little sisters mimicking the creatures whom they were once imprinted on. In that case, it doesn't even really need to be logical, it just needs to be "cool".
