A lot of games suffer in SLI mode. I'd guess I had to disable SLI in ~20% of my games due to poor(er) performance.
Tweak for stuttering/poor framerate:
If you're using 2 Nvidia cards in SLI mode, disable SLI mode from the Nvidia control panel and use your 2nd card for just PhysX. The game was optimized for AMD cards IIRC, and I couldn't believe it, but disabling SLI made the game run 1000% better.

Has anyone looked for/found a way to disable the FOV change on crouch? I dislike this in general and it (among other things in the game) makes me feel mildly motion sick. I generally don't get motion sick unless the FOV is really narrow or there is a lot of headbob, but this for some reason bugs me. Ideas?
Edit - Also the blue claw indicator, is there any way to get rid of that as well? Breaks the immersion...
I'm playing on win 10 through Steam and I'm getting the game launcher but when I hit play the screen stay black and I have to exit using Task Manager. I've tried lowering the graphics, with no success.
I know this is an old thread but I thought I would post my results anyway.

I downloaded Thief about a week ago and just finished yesterday. At no time did the game ever feel laggy or unplayable. The game was actually smooth even during the animation sequences and whenever any effects were on screen. Actually the only time the game lagged is when Kaspersky decided to start scanning my HD in the middle of the night, but it was easy enough to alt-tab out of the game to stop the scanning.
